Old Fashioned Corn Bread

This is the closest to Marie Callendar’s that I can find. Moist and yummy!

½ C butter 1 C flour
½ C sugar 1 C cornmeal
2 eggs ½ tsp salt
1 C buttermilk ½ tsp soda

Melt butter and mix with sugar, eggs, and buttermilk. Stir together flour, cornmeal, salt and soda. Combine the two mixtures, blending well. Pour into a greased (or sprayed) 8x8 pan. Bake at 375 degrees for 30 minutes. Double recipe for 9x13 pan.

NOTE: You can grind your cornmeal fresh, using 1 1/3 C popcorn for 2 C cornmeal.
