Zucchini Cupcakes

3 eggs
1 1/3 C. sugar
½ C. oil
½ C. orange juice
1 t. almond extract

2 ½ C. flour
2 tsp. cinnamon
2 t. baking powder
1 t. baking soda
1 t. salt
1 ½ C. shredded zucchini
· Beat eggs, sugar, oil, OJ, and extract.
· Combine dry ingredients. Add to egg mixture and mix well. Add zucchini.
· Fill paper-lined muffin cups 2/3 full.
· Bake at 350 degrees for 20-25 minutes. Cool. Frost with Caramel Frosting.
