Caramel Frosting

1 C. packed brown sugar
½ C. margarine
¼ C. milk
1 t. vanilla
1 ½ C. – 2 C. powdered sugar

· Combine brown sugar and milk in sauce pan; bring to boil over medium heat. Cook and stir for two minutes.
· Remove from heat; stir in vanilla. Cool to lukewarm.
· Gradually beat in powdered sugar until frosting reaches spreading consistency. Frost cupcakes.
· Yield: 2 doz. cupcakes
