Potato Cheese Soup

4 lg. potatoes
2 stalks celery, diced
1 onion diced
1 1/2 T. salt
1/2 T. sugar

Barely cover with water and bring to a boil then turn down and simmer for 20 minutes. In sauce pan melt 1 cube butter. Whip in 3/4 cups of flour. Cook and stir 1 min but don't let it burn. Add 2 cups half and half to soup, heat through. Add white sauce. Add 2 cups milk and 8 oz. Velveeta Cheese cut into chunks. Stir until melted and hot. Sprinkle with parsley.
