Makes 24 rolls
2 cups warm milk
1 cup sugar
1 cup mashed potatoes (instant)
2 eggs, beaten
1 tsp. salt
½ cup and 2 tbs. shortening (Crisco)
¾ cups water
2 packages of yeast
7 cups flour (approximately)
Mix for Filling:
§ ½ cup brown sugar
§ ½ cup white sugar
§ 5 tsp. cinnamon
Frosting:
§ 10 Tbs. soft butter
§ 6 cups powdered sugar
§ 3 tsp vanilla
§ About 4 Tbs milk
Blend butter and sugar. Stir in vanilla and milk – beat until frosting is smooth and of spreading consistency.
Directions:
§ Dissolve yeast in warm water
§ Stir in milk, sugar, mashed potatoes, salt, eggs, shortening and 2 cups of the flour
§ Add enough flour to make dough east to handle
§ Turn dough onto lightly floured board; knead until smooth and elastic (about 5 minutes)
§ Place in large bowl and cover
§ Let rise in warm place until double (about 1 ½ hours)
§ Punch down dough
§ Divide dough in half
§ Roll each half into a rectangle
§ Spread with butter (4 Tbs.)
§ Mix sugar and cinnamon and sprinkle over dough
§ Roll up and pinch sides to seal ends
§ But into rolls (using dental floss)
§ Let rise until double
§ Bake at 400° for 10-12 minutes
§ Frost while warm
