½ large onion, finely chopped
3 T. butter
4 oz. can chopped green chilies
2 14 oz. cans diced tomatoes
6 oz. cream cheese
1 ½ c. half & half
4 t. lemon juice
1 can chicken broth
garlic powder, to taste
cayenne powder, to taste
salt to taste
¼ t. cumin
2-3 breasts of chicken, cooked and cubed
1. cook onion til soft in butter
2. add chilies and tomatoes. Simmer over medium heat until liquid is nearly gone
3. stir in cream cheese. Keep heat medium until melted.
4. add chicken broth, half & half, seasonings, and chicken
5. heat til hot. Do not boil.
Serve with green onions, jack cheese, and tortilla chips.
