Sweet Potatoes in Edris' own words
"You asked about the sweet potatoes Patricia. Boil them but don't over cook them. Leave them on the hard side. Peel and roll in flour. Put in a shallow pan, bring to a boil water (really I don't know how much) about 1 1/2 cups, 3/4 cup maple syrup and a very generous piece of butter - about half of a 1/4 pound--or more if you want them real rich. then pour over potatoes and put in oven to finish cooking. Cook until liquid has thickened up. You will have to turn the potatoes during cooking to coat them with liquid. Be sure and salt potatoes while boiling. I have put grated orange over them while cooking in oven and that gives them a nice flavor." (Patricia never used orange.)
